Can anyone advise how you go about doing a track day.

Best to have fresh engine oil, filter & brake fluid in good clean knick.
Perhaps flush with dot 4 or 5.
Also put about 5 extra pounds into the tyres.
Just as an aside the prices listed in above links are higher than here in S.A.
Mallala track / practice day is only $135 & that includes a day lic.
6 x 15min sessions of as hard & fast as you want to go.
